From València, Spain With Love

In 2022, I embarked on a year-long journey to València, Spain, seeking adventure and immersion in Mediterranean cuisine. I didn’t know then that this experience would forever change my perspective on food.

I was immediately enveloped by a vibrant food scene—the aroma of freshly baked bread, the allure of colorful produce markets, and the sizzling of bustling kitchens. I soon realized that extra virgin olive oil (EVOO) was the heart and soul of Spanish cuisine.

My year in València taught me to appreciate the simplicity and beauty of this quality ingredient—the magic that lies within a single drop. EVOO became more than just an ingredient to me; it became a symbol of the transformative power of food.

When I returned home, I stuffed my suitcase with bottles of Spanish EVOO, determined to keep the spirit of València alive in my kitchen. And I began dreaming about ways to continue bringing Spain’s exceptional flavors into my life (and the life of my friends and family). Through collaboration with centuries-old, family farms, I found the answer. I am so honored to bring this taste of the Mediterranean sunshine straight from the hills of Spain to my home—and yours.

    In València, I explored local olive groves, where I observed the meticulous cultivation and harvesting processes. I marveled at the gnarled trees—their branches heavy with plump fruit—and the passion of the olive farmers as they spoke about the terroir of the soil, the climate, and the art of extracting the finest EVOO.

    In Valencia, chefs showed me the magic of EVOO. Their eyes sparkled as they explained how EVOO elevated every dish—enhancing its flavors and textures. These are some of my favorite simple ways to use it: drizzling it over tomato salads, brushing it on grilled vegetables, or infusing it with herbs for dipping bread.
