What it tastes like

Grassy and herbaceous up front, with green almond, fresh olive leaf, and a note of Mediterranean fig. A mild bitterness, then a clean peppery bite that builds slowly in the throat rather than hitting all at once. The finish is smooth and buttery and stays a while.

Pour it over warm bread, sliced tomatoes with salt, roasted vegetables, grilled fish, a bowl of beans, eggs in the morning. It is a finishing oil that is good enough to cook with and stable enough to take the heat.

The trade we make

Grossal olives are picked green and early, weeks before the fruit is heaviest with oil. A tree gives less that way. What comes back is a greener, more peppery oil with far more of the compounds that fade first in older bottles.

That trade is the whole reason this does not taste like what you are used to, and most of the reason it costs more.

    Sourced from small farms in Spain’s Valencian Community, our olives grow in sunlit hills at 350 meters above sea level — where the climate and soil create ideal conditions for exceptional flavor.

    Our oil is organically farmed and certified by the Committee of Ecological Agriculture of the Valencian Community (CAECV) and the EU. We are currently in the process of securing USDA Organic certification for the United States.

    Our methods protect the soil, preserve biodiversity, and let the Grossal olive’s true character shine — creating an oil that’s good for the planet and your table.

    Every harvest goes to Laboratorio Tello in Jaén before it is bottled. Not a marketing panel — the same analysis that determines whether an oil can legally be called extra virgin at all.

    • Total polyphenols: 569 mg/kg (Folin-Ciocalteu, as caffeic acid)
    • Vitamin E: 341 mg/kg alpha-tocopherol
    • Pesticide residues: None detected (GC-MS/MS, <0.01 mg/kg)
