The Valèvida Table
Women's Health Edition

Valèvida × Rooted Heart Wellness

Jessica Love of Rooted Heart Wellness opens with a broad conversation on women's health, cellular well-being, and the Mediterranean diet. Valèvida founder Johanna Marolf then leads a guided extra virgin olive oil tasting — where the oil comes from in València, how to tell real extra virgin olive oil from what is usually on the shelf, and how to use it at home so it is actually doing something. The afternoon closes over a fall soup with an open Q&A.

Your hosts

Jessica Love, APRN, FNP-C
Founder, Rooted Heart Wellness

Jessica Love is a certified nurse practitioner and the founder of Rooted Heart Wellness, a boutique private practice focused on integrative cardiometabolic health and lifestyle medicine. She takes a compassionate, whole-person approach to care, helping adults improve heart health, energy balance, stress resilience, and overall well-being — addressing key pillars of cardiometabolic health including nutrition, energy management, digestion, movement, stress physiology, and sustainable lifestyle change.

At this table she will present on the power of nutrition and how Mediterranean dietary habits support your daily life. Her hobbies include gardening, healthy cooking, running, being in nature, travel, and spending time with her husband and French bulldog, Beau.

Johanna Marolf
Founder, Valèvida

Johanna Marolf is the founder of Valèvida, a single-origin extra virgin olive oil made from the Grossal native cultivar in the Valencian Community of Spain. She started it after a year of living in València with her family, when she came home and could not find anything on an American shelf that tasted like what she had been eating. She went back for it.

She trained in tasting through the University of Murcia's extra virgin olive oil program — twenty-six hours of formal sensory work in tasting, gastronomy, and pairing — and returns to València every October to source that year's harvest herself from a small family cooperative. The olives are picked green and early, and cold-extracted within hours to preserve the quality.

Valèvida was built around transparency, because most people have no way to know what is really in the bottle. Johanna does independent lab testing and publishes the full lab panel for every harvest — acidity, polyphenol count, and a pesticide screen across more than two hundred compounds — and the harvest date is handwritten on every single bottle by hand.

She is passionate about the gut microbiome and a firm believer in the Mediterranean diet. She runs Valèvida from Kansas Cit, where she lives with her family. You will find her at the Brookside Farmers Market most Saturdays.

Jessica's presentation is focused on women's health, but everyone is welcome at this table. If you are interested in nutrition, the Mediterranean diet, and real extra virgin olive oil, come.
