Air Fryer Mediterranean Salmon with Valèvida
A weeknight salmon built for the air fryer — cherry tomatoes, red onion, and lemon from the farmers market, oregano and thyme cut fresh from the garden, finished with a generous pour of Valèvida extra virgin olive oil.

Tip: No fresh herbs on hand? Use half as much dried oregano and thyme instead.
Instructions
- Preheat the air fryer: Set to 265°F. Line the basket or tray with parchment.
- Coat the salmon: Pat the salmon dry and rub with 2 tablespoons of the Valèvida olive oil. Season both sides with a pinch of salt and pepper, then set it skin-down in the basket.
- Prep and toss the vegetables: Halve the tomatoes and thinly slice the lemon, red onion, and garlic. Rinse and drain the capers. Toss the tomatoes, olives, onion, garlic, and capers with 2 tablespoons of the Valèvida olive oil, the oregano, and the thyme.
- Arrange: Layer the lemon slices over and around the salmon, then scatter the vegetable mixture around the fish.
- Air fry: Cook at 265°F for about 25 minutes, until the salmon flakes easily with a fork.
- Finish and rest: Drizzle with the remaining Valèvida olive oil while it's still warm. Let it rest 5 minutes before serving.

- With a green salad or roasted asparagus
- At room temperature, for a make-ahead dinner
Valèvida Note
This one uses three separate pours instead of one — over the salmon, through the vegetables, and again at the end. Each does a different job: the first seasons the fish, the second carries the herbs into the tomatoes, and the last, poured while everything's still warm, is what you taste first.
