INGREDIENTS

  • 1 large ripe avocado
  • 2 slices whole‑grain or sourdough bread
  • 2 eggs
  • 1 tsp lemon juice
  • Sea salt & freshly cracked black pepper, to taste
  • Broccoli sprouts (to taste)
  • Valèvida Premium Organic EVOO, for drizzling
  • Optional: red pepper flakes, everything‑bagel seasoning, fresh chives or parsley

STEPS

  1. Boil the eggs: Place eggs in saucepan, cover with cold water, bring to boil. Remove from heat, cover, and let sit 6–10 minutes depending on desired yolk doneness. Transfer to ice bath, peel, and slice.
  2. Toast the bread until golden and crisp.
  3. Mash the avocado with lemon juice, salt, and pepper.
  4. Spread avocado on toast, top with sliced eggs and sprouts.
  5. Drizzle generously with Valèvida EVOO, add optional toppings.
  6. Serve immediately for maximum freshness.
