Instructions

  1. Toast bread until deeply golden.
  2. Cook eggs to your liking: soft-boil for 6–7 minutes, poach, or fry sunny-side up.
  3. Mash avocado with lemon/lime juice, salt, and pepper until creamy (leave it chunky if you like).
  4. Spread avocado over toast. Top with eggs and a handful of sprouts.
  5. Finish with a generous drizzle of Valèvida EVOO and red pepper flakes or seasoning if using.
  6. Serve immediately.

Jammy egg shortcut: simmer 7 minutes, then cool briefly under running water before peeling.

Make It Yours

  • Add crunch: sliced radish, cucumber ribbons, or toasted seeds.
  • Add creaminess: a swipe of ricotta or labneh under the avocado.
