- Toast bread until deeply golden.
- Cook eggs to your liking: soft-boil for 6–7 minutes, poach, or fry sunny-side up.
- Mash avocado with lemon/lime juice, salt, and pepper until creamy (leave it chunky if you like).
- Spread avocado over toast. Top with eggs and a handful of sprouts.
- Finish with a generous drizzle of Valèvida EVOO and red pepper flakes or seasoning if using.
- Serve immediately.
