INGREDIENTS
- 1 cup plain yogurt (Greek or regular)
- 3 large eggs
- ¾ cup sugar
- ½ cup Valèvida extra virgin olive oil
- 1 teaspoon vanilla extract
- Zest of 1 lemon or orange (optional)
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon salt
Greek yogurt yields a slightly richer texture. Regular yogurt keeps the crumb lighter. Both work beautifully.
STEPS
- Preheat oven to 350°F (175°C). Grease a loaf pan or 9-inch round cake pan.
- In a large bowl, whisk together yogurt, eggs, sugar, olive oil, vanilla, and citrus zest until smooth.
- In a separate bowl, mix flour, baking powder, and salt.
- Gently fold dry ingredients into wet ingredients until just combined. Do not overmix.
- Pour batter into prepared pan and smooth the top.
- Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
Oven temperatures vary. Check for doneness at 35 minutes. - Cool slightly before serving.
