Everyday Yogurt Extra Virgin Olive Oil Cake

INGREDIENTS

  • 1 cup plain yogurt (Greek or regular)
  • 3 large eggs
  • ¾ cup sugar
  • ½ cup Valèvida extra virgin olive oil
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon or orange (optional)
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt

Greek yogurt yields a slightly richer texture. Regular yogurt keeps the crumb lighter. Both work beautifully.

STEPS

  • Preheat oven to 350°F (175°C). Grease a loaf pan or 9-inch round cake pan.
  • In a large bowl, whisk together yogurt, eggs, sugar, olive oil, vanilla, and citrus zest until smooth.
  • In a separate bowl, mix flour, baking powder, and salt.
  • Gently fold dry ingredients into wet ingredients until just combined. Do not overmix.
  • Pour batter into prepared pan and smooth the top.
  • Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
    Oven temperatures vary. Check for doneness at 35 minutes.
  • Cool slightly before serving.
