Valèvida's Signature Pesto

INGREDIENTS

- 2 cups fresh basil leaves, packed
- 1/3 cup pine nuts (or walnuts/almonds)
- 2–3 garlic cloves, peeled
- 1/2 cup finely grated Parmigiano-Reggiano (or mix with Pecorino)
- 1/2–3/4 cup Valèvida Extra Virgin Olive Oil
- Sea salt & freshly ground black pepper, to taste

STEPS

1. In a food processor or mortar, combine basil, garlic, and nuts; pulse until coarsely chopped.
2. Add cheese and pulse briefly to incorporate.
3. With machine running, slowly pour in olive oil until emulsified and desired texture is reached.
4. Season to taste with salt and pepper.
5. Transfer to a container and cover with a thin layer of olive oil to preserve vibrancy.
