Simple Sautéed Asparagus

Since it is officially asparagus season, I wanted to share a dish I prepared this past weekend using our fresh harvest haul. This two-step method respects the vegetable and the oil in equal measure, ensuring the delicate green herb notes shine.

Simple Sautéed Asparagus

INGREDIENTS

  • 1 bunch fresh asparagus, woody ends trimmed
  • 2 tbsp Valèvida extra virgin olive oil (always cold-extracted)
  • 2 cloves garlic, finely minced
  • Sea salt

STEPS

  1. Fill a large skillet with about an inch of water and place a steamer basket inside. Cover and bring to a simmer. Steam the asparagus until just tender, about 5 minutes.
  2. Drain the asparagus and wipe the skillet dry.
  3. Return the pan to medium-low heat. Add two generous tablespoons of Valèvida and the minced garlic, sautéing until fragrant.
  4. Add the asparagus back into the pan, tossing gently until coated in the garlic-infused oil. Sauté for just a few minutes.
  5. Finish with a sprinkle of sea salt.

Just before serving, add one more raw drizzle of Valèvida. This preserves the most heat-sensitive antioxidants and highlights the signature "peppery kick" of the 2025 Fresh Harvest.

By steaming the asparagus first, we preserve its vibrant color and snap, leaving the Valèvida to act as both a nutrient-dense cooking medium and a bright, herbaceous finish.
