Tomato Carpaccio with Valèvida EVOO, Garlic, Parmesan & Lime

INGREDIENTS

- 5 tbsp Valèvida Premium Organic EVOO (3 tbsp for plating, plus more for finishing)
- 2–3 ripe heirloom tomatoes, well chilled
- 1 tbsp capers, rinsed
- 1 small shallot, finely minced
- 2 cloves garlic, finely chopped
- Juice of ½ lime (fresh)
- Fresh basil and mint leaves
- Sea salt & freshly cracked black pepper, to taste
- Shaved Parmesan, to finish
- 1 small baguette, sliced and toasted with a drizzle of Valèvida EVOO (optional)

STEPS

1. Chill the plate: Place your serving plate in the fridge to get it cold before assembling.
2. Toast the baguette (optional): Slice, drizzle with Valèvida EVOO, and toast until crisp and golden.
3. Start with EVOO: Pour about 3 tbsp of Valèvida EVOO onto the chilled plate as the base.
4. Assemble: Thinly slice the well-chilled tomatoes and arrange them over the oil. Season lightly with salt and cracked pepper. Sprinkle shallots, capers, and garlic evenly.
5. Finish: Squeeze lime juice over the top, then drizzle a little more EVOO to balance the acidity. Add shaved Parmesan.
6. Garnish & serve: Top with basil and mint. Serve immediately with the toasted baguette.
